The V-brakes I bought on eBay turned up.

The new folder brake setup is working well. The V-brake adapter doesn't flex the way it did at the front (the boltheads behind the studs sort of hook over the seatstays in a way they didn't on the fork), and the caliper is no worse than the cantis were with it flexing. In an ideal world I'd machine a custom adaptor for the front (or get eMachineShop to, but the cost would be silly for a one off).
I did find my heels tended to hit it at the back, but moving my feet out is actually more comfortable (and closer to the pedal position on the hybrid, with its triple chainset). These would move the pedal out a bit, but it's ok as they are, not having clips/cleats.

(Actually in an ideal world I'd have one of the new Bromptons Drakes have just got in (though they don't have any of the titanium parts), as well as a Dahon or two, and not worry about improving an old folder.)

The handling is better now the wheels are the same size again (I did consider changing just the front). I've now got a 36-hole 406 rim with no hub and a 36-hole 3-speed hub with no rim, waiting for me to order some appropriate length spokes on Monday from The Bike Man, for the folder. The singlespeed hub on it in the meantime works, but I don't really get the singlespeed mystique thing. (A 15-tooth freewheel would improve it if I really wanted to keep it singlespeed. But I don't.)
