Organising music question

One of the reasons for buying a bigger hard disk was to get around to putting some music onto it. 15GB of MP3s later, I've done most of the CDs in the house (I think), but there are still quite a few to go before I start thinking about vinyl and tape.
My mother-in-law recently bought an iPod Nano, and I bought a bigger SD card for my GPS/PDA which has some spare space after putting the Memory-Map Wales and Central England on at 1:50,000 along with the Navman UK road database, and now have a
copy of MortPlayer (though I need to spend some time reading it's manual) and a cassette adaptor so I can play through the car stereo.

Can anyone recommend an easy way of taking a load of mp3 files currently arranged as
<track artist>/<album>/<track name>
and rearranging them as
((genre == "Classical" || genre == "Books & Spoken Word") ? <composer> : <album artist>)/<album>/<track name> ?
mp3tag comes close, and Googling a little more Tag&Rename might do it, but further recommendations welcomed.

[EDIT: Now using < > rather than < >. Doh.]
